2 tbsp brandy 300g ground Pork 25g pistachios, shelled 7 rashers smoked streaky bacon 1 chicken breast fillet Method Preheat the oven to 180C, gas mark 4. Fry the pancetta for 2-3 minutes, until just starting to turn golden. Remove from the pan and set aside. Add the onion and cook gently for 3-4 minutes, until softened. Add the juniper berries and brandy and allow to bubble for a few seconds. Remove from the heat.

Put the pork mince in a bowl and stir in the pancetta, onion mixture, pistachios and seasoning.
